I was getting ready for work when I realized I had to curl tonight. No time for making dinner after work, so I decided to make some slow and easy potato soup. This decision was also influenced by the fact that my organic potatoes were growing in the pantry. Time for another episode of how to make breakfast and dinner at the same time.
Slow and Easy Potato Soup
Saute the veggies and deglaze the pan. Add the veggies and deglazing broth to the crock pot. Combine the whey powder and starch (or flour) with cold water and shake well before adding to the crock pot. I have a little jar I keep around for just this purpose. Cut all the eyes off the potatoes (save these for planting) and dice into smallish squarish pieces.
Add the potatoes and soyrizo to the pot. Add enough water to cover the potatoes, more if you like more broth in your soup. Season to taste. Let cook all day so the vegetables get nice and squishy. When you get around to eating dinner, give it a taste and add any last minute seasoning or cheese. You can also mash the potatoes if you like a creamier soup.
